Tomato Rice

Hi everyone, I hope you are doing good. Today I am here to share a new recipe. That is Tomato Rice with Muir Glen tomatoes. This post has been sponsored by Muir Glen in partnership with TheFeedfeed.

Muir Glen is a very reputed brand in the USA for its different products like organic tomatoes, pasta sauce, and salsa. Thanks to Muir Glen Organic Tomatoes, it has become convenient to make any Indian curry. Their canned tomatoes are the best.
Do you know how the best quality of tomatoes comes from Muir Glen?  Because it focuses on the following three principles - 1. Organic 2. Pollinators 3. Zero waste. In order to grow a better-tasting tomato, they believe it must be grown organically. Their farmers in the Sacramento Valley of California work together with local pollinators (aka bees!) to keep a healthy ecosystem and produce the best tomatoes possible. However, not every tomato is good enough for the cans, which is why they have created a composting facility for any tomato waste. Muir Glen focuses on working in harmony with their environment because it’s what makes their tomatoes taste better and the planet a happier place.

I love to shop at co-op grocers. I have bought the Muir Glen Tomatoes from our local Co-Op called People’s organic food market located in the Ocean Beach area in San Diego.
Co-OPs are community-owned businesses, they are
committed to the people they serve and the communities they live in. Owners
can have a voice in what is available for purchase, as well as in the overall
organization of their particular co-op. Owners get the most buying power for
their money, and profits stay in the community, contributing to its economic
strength. There is a promotion running with Muir Glen at their local NCG coop. 10 for $10 (14oz) from today until 2/4.

Today I will share the recipe of Tomato Rice. This recipe is inspired by a popular South Indian dish, Thakkali Sadam. As the name indicates, Tomato rice is a rice-based dish made with lots of tomtates and spices. Tomato rice can be served without any side dishes as it is very tasty and flavorful on its own. This rice recipe is fabulous to pack for lunch boxes since they are super quick to make. I am really in love with Tomato rice and this is quite a regular dish in my kitchen.

There are two ways to make this rice – one you can make it from raw rice and cook from scratch and second is to make it with pre-cooked rice.  I always like to prepare this dish with cooked rice, a perfect way to use leftover rice and transform the plain white rice into a totally new dish.

Usually, tomato rice is very spicy and people enjoy it that way. However, my tomato rice is not that spicy. I adjust spice levels to taste.

The dish is gluten-free and vegan too.
