Tomato Rice

Today I will share the recipe of Tomato Rice. This recipe is inspired by a popular South Indian dish, Thakkali Sadam. As the name indicates, Tomato rice is a rice-based dish made with lots of tomtates and spices. Tomato rice can be served without any side dishes as it is very tasty and flavorful on its own. This rice recipe is fabulous to pack for lunch boxes since they are super quick to make. I am really in love with Tomato rice and this is quite a regular dish in my kitchen.

There are two ways to make this rice – one you can make it from raw rice and cook from scratch and second is to make it with pre-cooked rice.  I always like to prepare this dish with cooked rice, a perfect way to use leftover rice and transform the plain white rice into a totally new dish. 

Usually, tomato rice is very spicy and people enjoy it that way. However, my tomato rice is not that spicy. I adjust spice levels to taste.

The dish is gluten-free and vegan too.







Recipe Of Tomato Rice with Muir Glen Tomatoes:

Preparation time: 10 minutes 
Cook time: 20 minutes 

Yield: serves - 5 

Ingredients:

Oil: 3 + 1 tablespoons 
Cumin seeds: 1/2 teaspoon
Whole Red Chili: 1
Mustard seeds: 1/2 teaspoon
Curry leaves: 6 + 4
Asafetida: a pinch

Onion: one medium (finely chopped) 
Ginger paste: 1teaspoon
Garlic paste: 1tablespoon

Muir Glen Organic diced tomatoes: 1 can

Salt: to taste 
Sugar: to taste 
Sambar Masala: 1tablespoon 

Cooked Basmati rice: 5 to 6 cups

Cashew nuts: one handful 


Method: 

Heat the 3 tablespoons of oil in a large skillet. Add cumin seeds, mustard seeds, whole red chili, and curry leaves. Once the mustard seeds begin to pop up add the asafetida. 

Add onion to the pan, fry it until it is translucent. Add ginger and garlic paste. Cook, stirring occasionally until raw smell goes off. Add the sambar masala and keep stirring it. 

Add the Muir Gen canned tomatoes to it. Stir and mix it well. Add salt and let it cook until the tomatoes are soft, mushy and beginning to caramelize around the edged of the pan. 

Add rice and stir to coat. Add salt and sugar to taste. Once the rice is well coated with the tomato mixture. Remove it from the heat. Cover and let it stand for minutes. 

Take a small pan, add the remaining oil, and heat it up. Add a few curry leaves and the cashew nuts and fry it on low heat until it becomes light brown. Now add the cashews to the rice and mix it well. 
Serve the tomato rice with any other curries or with a bowl Raita.
